Pinot Nero D.O.P.

We started cultivating pinot nero in the late ‘90s for two main reasons. The first is my passion for pinot nero as a variety and as a wine. The second is my never-ending research to adapt the vines that I grow to the features which specific parts of our land present: for the Pinot Nero I used parts of our land located at altitudes where the temperature range is particularly well-suited to this variety.
The Pinot grape is very delicate, requiring special care and attention.
If pinot nero, which comes from Burgundy, is considered one of the most noble red grape varieties (in this it competes with our "neighbor", Nebbiolo.), it is also one of the vines which is most difficult to interpret, posing challenges to the wine maker.
This is how I would describe the peculiarity of my pinot nero - Saracco pinot nero combines the traditional delicate bouquet of red berries and a velvety taste with good acidity, round body, complex structure and high persistence on the palate. In my pinot nero I find aspects of our Piemontese landscape, characterized by the magnificent Alps which rise up from our hills, from which cool wind descends in the evenings.

Vinification:
Vinification in steel tanks, refining in 225 l.
barriques and then in big barrels for12-14 months.
After bottling, the wine remains 6 months in bottle before releasing.
